Savory Dijon Pork Loin

1 lb. pork tenderloin 1 Tblsp. oregano
1 Tblsp. Dijon mustard 1 Tblsp. parsley
1 Tblsp. rosemary ½ tsp. salt
½ tsp. pepper

Preheat oven to 400°.  Brush pork tenderloin with Dijon mustard.

Combine rosemary, oregano, parsley, salt, and pepper; roll brushed tenderloin in seasonings.  Place onto roasting pan on rack.  Roast until meat thermometer inserted into pork reaches 160° (about 25 to 30 minutes).  Remove from oven and let rest for 5 minutes before carving.  Serves 4.
